  • Current research activities

    Activities involve natural products and nutraceuticals; mechanisms involved in shelf life extension of horticultural products; processing technologies for adding value to horticultural commodities; new crops and crop improvement. Past projects involved nutraceuticals include capsaicinoids in peppers, lycopene from watermelon, thujone/camphor from sage and thymol/carvacrol from oregano. Shelf life extension projects include defining the mechanism of dry leaf partial extraction for improving flavor/extending shelf life. New crops under investigation include cilantro, basil and grape pomace, all targeted for nutraceutical processing. Development of integrated production, harvesting, postharvest handling and processing systems for horticultural crops is a focus of research activities.

    Current research projects include:  Effects of micro-oxygenation on the aging of wine made from hybrid grapes; Assessment of antioxidant capacity and characterization of antioxidant compounds in novel blackberry products; Recovery of high-value components from winery waste streams; Evaluation of a value-added peanut butter product.

    Major areas of research interest

    • Identify and investigate the winemaking potential of grape and fruit crops in Oklahoma.
    • Identify and investigate the processing potential of alternate crops.
    • Research to address nutraceutical content and/or quality of horticultural foods.
    • Research to address food safety and quality issues with processed fruits and vegetables.
